Gluten Free Pizza

Pizza, being a food group all of it's own, in my opinion, is one of those meals that should always be on hand. With this recipe you can even pre-make the dough and freeze it. Just place in the fridge in the morning and by late afternoon you'll be ready to bake!

The Fixin's:
2 c all-purpose gluten-free flour
1 1/2 t xanthan gum
1 T active dry yeast
1 t sugar
3/4 t kosher salt
3/4 c warm water
3 T extra virgin olive oil
1/8 c corn starch

What To Do:

Step 1: Combine flour, xanthan gum, yeast, sugar and salt in a medium bowl.

Step 2: Add the water and oil while stirring constantly, until it forms a ball.


Step 3: Thoroughly coat the outside of dough ball with oil so that it is completely covered.

Step 4: Cover the bowl with plastic wrap and let it rise for 1 hour. Yes, a whole hour. I realize you're probably hungry now, but didn't your mother ever teach you that good things come to those who wait?


Step 5: Once the dough has risen, cover it in plastic wrap and place in the fridge for another hour. Okay, okay, I see you reaching for your phone. Don't call the delivery guy. Just give it one more hour. Go waste some time on Pinterest or something.

Step 6: Next, preheat the oven to 400 degrees. Then, on a clean surface, sprinkle some corn starch and roll out the dough until your preferred thickness is reached.

Step 7: Coat the top with olive oil and bake for 5 -7 minutes until crust is crisp.



Step 8: Finally, cover with pizza sauce, mozzarella and your favorite toppings, and bake for another 5 - 7 minutes until the cheese is melted. For a little extra crispiness, I like to turn my oven to broil the last 2 minutes.


As you can see, I like my pizza like I like my men; MOUTHWATERING :)



Step 9: Put that $20 you just saved from not ordering delivery back in your pocket and EAT!
